Another Pumpkin Recipe You Need to Try This Season in Amarillo
I had a lot of success with my Dinner in a Pumpkin. So I am now on the hunt for more pumpkin recipes. I mean if you end up with extra pumpkins they are a lot of fun for the family to use in a recipe.
I am even going to hunt down recipes that you can use just the store bought canned pumpkins. Even though using a whole pumpkin is fun too. When I was looking for full pumpkin recipes the Dinner in a Pumpkin recipe stood out.
Oh but then so did this one. Chili in a Pumpkin. I know that chili is great on a cold day. I am also not against eating it at other times of the year. I was excite to try this one too.
- 10lb – 12lb Pumpkin
- 1lb ground beef
- 1 large onion diced
- 1 15.5oz can kidney beans
- 2 15.5oz can chili beans
- 1 15.5oz can great northern beans
- 1 15oz can pumpkin puree
- 2 14oz cans tomato sauce
- 2 14oz cans diced tomatoes
- Chili mix packet
- 1/2 TBS Cinnamon
- Sour cream, diced green onions and shredded cheese for toppings
This is another fun and delicious one.
Preheat your oven to 350. Brown the ground beef and drain off the grease. Add the onions and cook until clear. Now you add your beans, pumpkin puree, tomatoes and chili packet. Let that simmer for a few minutes. Cut off the top of your pumpkin and clean out the seeds and pulp. Now fill the pumpkin with your chili mixture. Place your pumpkin on a cookie sheet and bake for forty five minutes.
Now you can scoop out your serving of chili and top with whatever you want. You can used sour cream, cheese, diced onions. Your kids can enjoy decorating your pumpkin if they want before you fill it up and bake. They can enjoy the fun of helping with dinner.
